I posted a grilled fish taco recipe awhile back, now here’s an alternative recipe for those of you who prefer fried to grilled and aren’t afraid of the extra kick that pureed chipotle pepper can add to your dish.
Whether you had a great day of fishing and are taking fillets home for dinner or if you’re stopping at your local fish market, these mahi mahi tacos will be a new favorite.
Ingredients:
1 package of flour tortillas
1 bag of Southwest Tequila Marinade (tequila, lime and cilantro)
3 to 4 lbs of filleted mahi mahi
2 cups chopped lettuce
1 cup sour cream
1 pureed chipotle pepper
2 cups cornmeal
3 cups canola oil
2 T chopped fresh cilantro
1 lime
2 cups red radicchio
Directions: Marinade your mahi fillets in the Southwest Tequila Marinade. Pre-heat the oil to 350 degrees. Puree chipotle pepper and mix with sour cream, cilantro and a touch of fresh lime. Batter the fish in the cornmeal and fry until golden brown, then place over flour tortilla. Drizzle chipotle sour cream over fish with the squirt of lime juice and serve (5 to 6 servings).
