Here’s a super easy and healthy roasted snapper recipe that you can make with mangrove snapper or most any white fish. Other fish options might include sea trout, walleye, grouper, mahi mahi, redfish or tripletail.
Ingredients:
2 pints of cherry tomatoes
1 tablespoon extra virgin olive oil
10 garlic cloves, peeled
Sea salt to taste
Black pepper
1/2 cup fresh basil leaves, cut or torn into thirds
1 to 1 1/4 pounds mangrove snapper
Directions:
Preheat oven to 425 degrees F. Combine tomatoes, oil, garlic, salt, pepper and 1/2 of the basil in a 9 x 13-inch baking pan. Roast for 15 minutes. Remove tomato mixture from oven and stir. Place fish in pan with tomatoes, put back in the oven and continue roasting for 7 to 10 minutes more or until fish is no longer translucent and tomatoes start to burst. Remove from oven. Divide roasted snapper among serving plates. Add remaining 1/2 of basil leaves to tomatoes, and spoon mixture over fish.
