One of the tastiest and easiest recipes you’ll ever come across for mahi mahi or any other white flaky fish. Simple ingredients and quick preparation. Serving size: 2 to 3
Ingredients:
- 1 cup sour cream (can use light or low fat)
- 1 cup mayo (can use light or low fat)
- 1 packet Hidden Valley Ranch dry seasoning (traditional ranch blend)
- 2 cups French’s French Fried Onions
- 2 to 3 medium size (6 oz) mahi filets
Directions:
Pre-heat the oven to 350 degrees. Mix together the sour cream, mayo and entire packet of Hidden Valley Ranch seasoning in a medium sized bowl. Take the (4 to 6 ounce) fresh mahi filets and dip them into the sour cream/mayo/dressing mixture, then lay flat on a baking sheet or in a shallow baking dish.
Pour the French Fried Onions into a zip lock bag. Seal the bag and lightly crush the onions using a rolling pin (or unopened bottle of wine).
Coat the fish with the crushed onions until completely covered, place back onto the baking sheet or baking dish. Cook at 350 degrees for 15 to 20 minutes depending on the thickness of filet (fish should flake lightly with a fork).
Serve with a side salad and pair with a crispy New Zealand Sauvignon Blanc.
